EASY AND HEALTHY WINTER CHICKEN SOUP

I was at a friends place the other day and tried this amazing hearty chicken soup that lead me to wait for a Briscoes Sale and invest in a slow cooker just so could I could make it again. I found it boosted my immune system at the time, was full of nutrients and not to mention delicious. I usually don't find soup that filling but this one definitely hit the spot. There was no need to have bread with it-it was a meal on its own. So I thought to share this recipe just in time for the winter months.

INGREDIENTS

1 whole organic or free range chicken
5 carrots, diced or cut into circular chunks
5 courgettes, diced or cut into circular chunks
1 large white onion, diced
4 cloves garlic, peeled and chopped
1/3 cup fresh parsley, finely chopped
3 tablespoons raw apple cider vinegar
1 teaspoon sea salt
1/2 teaspoon black pepper
1 teaspoon turmeric
1 teaspoon chilli flakes
6 cups water

METHOD

1. Place chicken in the middle of a slow cooker, then add in all the remaining ingredients.

2. Set on low for eight hours.

3. Once finished, remove the chicken and shred it from the bone. Remove bones, then place shredded chicken back into the slow cooker and mix ingredients together. Using a ladle, pour soup into bowls and enjoy!

NOTES

A key ingredient in this soup is the raw apple cider vinegar, as it helps to draw out essential minerals from the chicken bones. Bone broth along with the garlic, turmeric, veges and protein are key ingredients to help keep your immune system strong during the cooler months.
